Bruschetta (or Tomato/Garlic Marinade)

2 medium-large ripe tomatoes

1 bunch fresh basil

juice of half a lemon

5 medium cloves garlic

1-2 tablespoons olive oil

1 baguette of french or italian bread

sharp knife

salt and pepper to taste


This is another simple recipe that tastes great. Finely chop the tomatoes, garlic and basil, them all into a bowl and add the olive oil and the lemon juice. Salt and pepper to taste. Let the marinade sit for an hour or so (refrigerate) and then slice toast some bread. Put the mixture on the bread and eat away. This goes really well with the vegan pesto recipe from last month as well.
